Extra fluffy chia banana pancakes


Ingredients:

1 tablespoon chia seeds

2 tablespoon warm water

1 ripe large banana

1 teaspoon vanilla extract

1 cup whole wheat flour

2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1 cup soy milk (or more)

Preparation:

1. In a small bowl, mix the chia seeds and warm water and let sit for at least 5 minutes so the chia seeds absorb the water and turn into jelly.

2. In a larger bowl, mash the banana and add the vanilla extract and chia jelly.

3. Mix the flour, baking powder, salt and cinnamon together and whisk it in the banana mixture.

4. Add the milk in little by little until it gets a nice pancake consistency. (Which I would compare to a mashed banana consistency, not too runny but when you spoon it in the pan it spreads.)

5. Let a non-stick pan warm up on the stove top, and when it gets really hot spoon a good amount of pancake mixture in (to get your preferred pancake size) and cover for a couple minutes.

6. When the dough starts bubbling and the sides of the pancakes start to dry, flip it over. Those pancakes get pretty thick so they're easy to flip! #yayy

7. Let it cook for a couple more minutes and serve with fresh berries, maple syrup and peanut butter. (or any other yummy toppings combo!)
